Light Infantry generally suck but are good for sieges since you can get so damn many for cheap, and Heavy Cav is always good but expensive and rare. Whatever you do, don't start mixing a ton of units together or they'll perform much worse. Heavy Infantry is always solid, so probably a mix of Shock to Skirmish would work. I do believe that Scots and Italians have to mix a few Defense retinues in there for a few Archers, but that's the only mixing needed. They are pretty much the best unit in the game.
